Weight Watchers French Onion Chicken Bake

SERVINGS: Six servings (1 chicken breast, 1/4 cup onions, and sauce)

FeliciaFitnessHealth, one of my Instagram favourites, inspired this French Onion Chicken Bake.
Felicia prepares a light version of French Onion Chicken that is amazing, and after cooking it with a few tweaks, I realized I needed it in my life for the rest of my life—and you will, too!

What are the ingredients for this French Onion Chicken?

  • raw paprika, skinless, boneless chicken breast
  • powdered garlic
  • salt with seasonings
  • Light butter produced with canola oil from Land o’Lakes
  • peeled and sliced little yellow onion
  • I use Campbell’s French onion soup.
  • I use Market Pantry low-fat mozzarella or Trader Joe’s lite mozzarella because it’s fat-free or light.

What gives this French Onion Chicken its distinctive flavour?

Seasoning the chicken breast with paprika, garlic powder, and seasoned salt before grilling it in a cast-iron skillet pan can make all the difference.
In addition to the fresh sautéed onions, I prefer to add a can of Campbell’s French onion soup to accentuate the caramelized onion flavour, and I must say, the French onion soup elevates this meal to new heights!!

What’s the best way to make this French Onion Chicken Bake?

  • Preheat the oven to 350 degrees Fahrenheit.
  • Melt butter in a skillet (or cast iron grill skillet) and add chopped onions.
  • In a skillet, cook the onions in butter until softened and transparent.
  • Place onions on a platter and set them aside when they are tender.
  • Spray a nonstick cooking spray into the same skillet.
  • (I forgot to take a picture of this)
  • Paprika, garlic powder, and seasoned salt are sprinkled over each chicken breast.
  • Place the seasoned chicken in the skillet that has been prepared.
  • Cook on medium-high for 5-7 minutes, or until chicken breasts are golden brown.
  • Return the onions to the skillet along with the chicken breasts.
  • Pour in the French onion soup from the can.
  • Simmer the chicken and onions in the stock for 2-3 minutes, or until the chicken is caramelized.
  • Using a cast-iron skillet, sprinkle light mozzarella cheese over each chicken breast.
  • (Alternatively, place the chicken, onions, and sauce in an oven-safe baking dish and sprinkle lightly with mild mozzarella cheese.)
  • Preheat the oven to 350°F and place the skillet or baking dish inside.
  • Cook for 10-15 minutes, or until the sauce is bubbling.
