I enjoy making casseroles almost every day, but I especially enjoy making them during holidays, family dinners, and events such as the Super Bowl. They’re easy to make and taste delicious. This one, which is only one WW point, is one of the GREAT ones.

The whole family will enjoy Taco casserole! It’s super simple to prepare as well as quick to clean up. It’s an affordable dinner! It can be designed in just 30 minutes! If you’re using The Weight Watcher FreeStyle plan, it is only one point per portion.

Ingredients for Weight Watchers Taco Casserole

  • One lb. of ground turkey or chicken breasts
  • One dice white onion
  • One can of whole kernel corn
  • One can of black beans
  • 1 Tbsp taco seasoning
  • 2 tbsp taco sauce
  • 1/4 cup fat-free, Sour cream
  • 1/2 cup fat-free shredded cheddar cheese
  • 1 cup fresh tomatoes diced
  • 1/3 cup green onions 1/3 cup green

How to Make Weight Watchers Taco Casserole

  1. Saute the meat, beans, onion, taco seasoning sauce and corn on medium-high until the heart is well-browned (or Soy crumbles become wholly cooked).
  2. Place half the meat mixture into the casserole dish, spread it evenly, top it with a thin layer of sour cream, and then sprinkle on some cheese.
  3. Repeat. Cover with cheese.
  4. Bake at 350 degrees for 15 minutes. Then serve served with tomatoes diced along with green onions.

Can I add rice?

Absolutely! It would help if you had a couple of cups of rice cooked (or frozen to make it easier) and mixed it into the corn and beans. Cooked quinoa works well. You’ll get between 6 and 8 servings from this recipe if you add rice. For those on Weight Watchers, when there is cooked rice of 2 cups and count the recipe to be six servings, you will earn 4 Smartpoints per serving when you add the rice.
